Throat Chakra Blue Cheese Wedge Salad Recipe

This is a crisp, fresh, classic way to bring that Throat Chakra (Vishuddha) vibration to the table. Blue can be the hardest hue to bring to the plate, but this recipe definitely helps us get it there. Since Throat Wednesday is all about finding your voice, this wedge salad with bold, blue cheese is the perfect culinary match.

THE CURATION (INGREDIENTS)
4 Servings

For the blue cheese dressing:
1 cup sour cream
1/2 cup mayonnaise
3 Tbsp buttermilk
1/2 Tbsp lemon juice
2 teaspoons red wine vinegar
1/2 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/2 teaspoon fresh ground pepper
1 clove garlic – grated
2 green onions – chopped, green parts only
4 ounces blue cheese crumbles – reserve a few spoonfuls for garnish

For the wedge salad:
1 head iceberg lettuce
8 slices bacon
1 cup cherry tomatoes – halved
1/2 cup red onion – chopped
The reserved spoonfuls of blue cheese crumbles

THE PROCESS (INSTRUCTIONS)

  1. Add all of the blue cheese dressing ingredients to a medium bowl and stir well to combine. Refrigerate.
  2. Cut the bacon into pieces and cook in a skillet until crisp. Remove bacon and let drain on a paper towel-lined plate.
  3. Cut the head of iceberg lettuce in half. Cut those halves again to create wedges and place each one on their own plate.
  4. Spoon the chilled dressing over each wedge and then top each of them with the bacon crumbles, tomato halves, chopped red onions and reserved blue cheese crumbles. Season with fresh ground black pepper, to taste.
  5. Enjoy!
