These fresh, dainty finger sandwiches elevate classic pantry ingredients into a polished midday refreshment that is perfect for light hosting or a quiet afternoon to yourself. The addition of fresh garden dill, snappy red chives, and a bright splash of citrus entirely cuts through the richness of the premium albacore. Sliced into precise, geometric rows, they deliver an immediate touch of visual structure to your lunch platter with minimal effort.

THE CURATION (INGREDIENTS)
12 Finger Sandwiches

For the Tuna
2 cans (5 oz each) premium solid white albacore tuna in water, thoroughly drained
3 tbsp high-quality avocado oil mayonnaise
1 tbsp premium cold-pressed extra virgin olive oil
1 tbsp fresh lemon juice, freshly squeezed
2 tbsp finely minced organic red onion
2 tbsp fresh organic dill, finely chopped
1 tbsp fresh organic chives, snipped thin
A pinch of coarse sea salt and freshly cracked black pepper

For the Sandwich
6 slices of premium, thin-sliced artisanal white or brioche bread
1/2 cup fresh organic English cucumber, sliced into paper-thin rounds
1 cup fresh organic microgreens or baby arugula
A light layer of unsalted, softened butter

THE PROCESS (INSTRUCTIONS)

  1. Open your premium albacore tuna cans and drain the water completely. Place the dry tuna into your medium ceramic mixing bowl.
  2. Use a fork to gently flake the fish into uniform, delicate pieces—avoid over-mashing to preserve the distinct texture.
  3. Add the avocado oil mayonnaise, cold-pressed olive oil, and fresh lemon juice to the bowl. Drop in the finely minced red onion, fresh dill, and snipped chives.
  4. Sprinkle a pinch of coarse sea salt and freshly cracked black pepper over the top. Use a silicone spatula to gently fold the mixture together until a silky, aromatic emulsion forms.
  5. Lay your 6 slices of artisanal brioche bread flat onto your wooden cutting board. Using a butter knife, spread a paper-thin, even layer of softened butter across one side of each slice.
  6. Divide the refined tuna mix evenly among 3 of the bread slices, smoothing it flat right to the edges using your spatula. Layer your paper-thin cucumber rounds directly over the tuna mixture, slightly overlapping them like scales.
  7. Top the cucumbers with a light, uniform cloud of fresh microgreens or baby arugula. Place the remaining 3 bread slices on top, butter-side down, pressing gently to secure the stack.
  8. Using a very sharp chef’s knife, slice the crusts off all four sides of each sandwich to create clean, sharp, rectangular blocks. Slice each large rectangular sandwich vertically into three long, uniform, parallel strips. Wipe your knife blade clean with a damp towel between every single cut to guarantee flawless, pristine edges. Arrange the rows on your favorite platter and serve immediately.

TIPS AND NOTES

  • If you are prepping these for guests, place a slightly damp, clean paper towel flat over the serving platter before sealing it about an hour before they arrive. This keeps the artisanal bread perfectly soft and fresh until the exact moment you serve.
  • Keeping the red onion and cucumber completely dry before assembling prevents excess water from pooling inside your sandwich rows, maintaining a tight, beautiful structural hold.
