1lb Carrots (Peeled and sliced diagonally)
2Tbsp Raw Honey (Local is best)
1Tbsp Extra Virgin Olive Oil
1tsp Fresh Thyme (Stripped from the stem)
Sea Salt & Fresh Ground Pepper
THE PROCESS (INSTRUCTIONS)
- Preheat your oven to 400°F.
- In a small bowl, whisk together the honey, extra virgin olive oil, salt and pepper.
- Place the carrots on a parchment-lined sheet pan. Drizzle the honey mixture over them and toss until evenly coated.
- Bake for 20-25 minutes until the carrots are tender and the edges are slightly caramelized.
- Sprinkle with fresh thyme while still warm.
