This quick and easy recipe replaces traditional bread with a thick ring of yellow bell pepper, creating a grain-free, nutrient-packed start to the beginning of your week.
THE CURATION (INGREDIENTS)
1-2 Servings
1 Yellow Bell Pepper
2 Eggs
1Tbsp Butter
Maldon Sea Salt Flakes, to taste
Fresh Ground Pepper, to taste
THE PROCESS (INSTRUCTIONS)
- Slice your yellow bell pepper into 1-inch thick rings. Remove the seeds and membrane, keeping the circular shape intact.
- Heat your cast iron skillet over medium heat with 1Tbsp Butter. Place two pepper rings in the pan and sauté each side for 2 minutes until they begin to soften.
- Crack one egg directly into the center of each pepper ring.
- Cover the skillet with a lid for 2-4 minutes until the whites are fully set and the yolk is a golden yellow.
- Slide the rings onto a plate. Top with salt and pepper and garnish with whatever toppings you desire (a pinch of crushed red pepper is a great choice to represent the “fire” of the Solar Plexus).
