Solar Plexus Bell Pepper Egg-in-a-Hole

This quick and easy recipe replaces traditional bread with a thick ring of yellow bell pepper, creating a grain-free, nutrient-packed start to the beginning of your week.

THE CURATION (INGREDIENTS)

1-2 Servings

1 Yellow Bell Pepper
2 Eggs
1Tbsp Butter
Maldon Sea Salt Flakes, to taste
Fresh Ground Pepper, to taste

THE PROCESS (INSTRUCTIONS)

  1. Slice your yellow bell pepper into 1-inch thick rings. Remove the seeds and membrane, keeping the circular shape intact.
  2. Heat your cast iron skillet over medium heat with 1Tbsp Butter. Place two pepper rings in the pan and sauté each side for 2 minutes until they begin to soften.
  3. Crack one egg directly into the center of each pepper ring.
  4. Cover the skillet with a lid for 2-4 minutes until the whites are fully set and the yolk is a golden yellow.
  5. Slide the rings onto a plate. Top with salt and pepper and garnish with whatever toppings you desire (a pinch of crushed red pepper is a great choice to represent the “fire” of the Solar Plexus).
